2. ObjectivesThe aim of this paper is to quantify and discuss the benefits oftraceability improvements to food manufacturers. As the quantificationwould not be possible on a completely theoretical level, wechose to focus on the supply chain of chocolate and the productionsystem of a chocolate manufacturer to be able to illustrate thetrade-offs and potential benefits of improving traceability. Based onthis case study, we are able to illustrate two main aspects. First, wequantify the influence of reducing batch dispersion on productionefficiency and recall size. Secondly, we quantify the benefits interms of reduction of recall size for possible improvements of thetraceability system used in the cocoa supply chain. Overall, we aimto demonstrate the additional value of traceability information inthe chocolate supply chain, as well as providing an inspirationalexample case for other industries.
