The raw silk was degumming with new method by using electrolyzed alkaline
water and the traditional silk degumming process used as positive control. The
condition and concentration ratio between sericin sample and enzyme trypsin were
optimized and produced bioactive sericin. The digested process was determined by
using SDS-PAGE and zymogram analysis. Furthermore, the biological activities
included with antioxidant, antityrosinase, antimicrobial and anti-inflammation were
examined and showed the valuable of bioactive sericin from waste product of silk
industry.
