Kids love their birthday. As parents, birthdays are time when we think back to the day your child was born, the years that followed, how much they have grow, and how time flies.
The kid is just thinking about 2 things. Presents, and blowing out the candles on their cake.
Many a birthday party I’ve been to, where the cakes arrival brings on an intense desire to be the first one to blow out ALL the candles, and this, often, is accompanied by many tears with the one, or four other kids that ‘missed out’. We light up the candles, and once again, take turns for each kid to blow them out. Doesn’t matter if there is 4 kids, or in our families case, 9 (not all mine, cousins!), every kid must have a turn….
So when my little Miss Pippa turned 4 at the start of this year, I thought I’d try my hand at a rainbow cake. Now, this was the beginning of my raw cake venture, I’d dabbled here in there in the raw-cake-o-sphere, but this was my first rainbow cake, using no colourings. Back in the day, when I cranked out macarons and made cool cakes, colourings came out of a bottle… not this time. Enter Mr Spinach, Mr Avocado, Mr Tumeric, and Miss Raspberry and Blueberry.

The cake went down alright, not my finest work taste wise…and I had the kids fooled, they had no idea. I watched one of the cousins eat half his piece, and once I told him the green was made from spinach, he promptly put down his spoon and refused to eat any more….
Anyway, it was lovely to be able to create a cake that fits into our family’s lifestyle now- which is whole foods- gluten free, dairy free and refined sugar free. Some call it Paleo, ancestral, primal. Call it what you want, it’s whole foods, no processed crap. Full stop. That’s a WHOLE other post (or 10).
Most importantly, Miss Pippa loved her cake, she was the first to blow out the candles, and was so excited to eat something colourful that is ‘good for your belly’.
