Portofino is the highest service performance Italian restaurant in Le meridian Phuket Beach Resort. It’s reproduces from Portofino port the fishing village in Italy with oil painting interior design and luxury table clothes and comfortable chairs to handle SPG guest for breakfast and the guest who love to have a romantic private dinner with various kind wine of the world. The guest can enjoy popular Italian specialties in a trattoria atmosphere such as, fresh pasta and various traditional dishes.
4.2.2 SPG Platinum Member Breakfast Service Procedures
1. Greeting the guest
When guest approaches the restaurant:
- Maintain eye contact at least from 10 meters distance
- Smile/Wai
- Good morning Mr./Ms.______(Use guest name if possible).
- How are you today?
*Do not wait until the guest approach you to greet them and to be of assistance.
2. Ask their room number for checking guest member
-If they are not a platinum member, recommend them for extra charge.
3. Escorting the guest
- Would you like to sit inside or outside? Would you prefer to seat in the smoking or in the non-smoking section of the restaurant?
-This way please; mind your step; if in stairs
* Do not use word “follow”. Guest may not like the word since it dictates and they might feel they are being ordered to go to their table.
4. Taking order coffee/tea and any special
-Would you like some coffee or tea?
5. Serve eyes opener (Jean Gorges Menu; Le Meridien signature)
-Excuse me, May I offer eyes opener?
-We have mango and strawberry today (or raspberry and passion fruit).
- Explain if the guests want to know what is eyes opener; It’s a fresh mango mix with lime, salt, a little bit chilly and pepper to make your eyes open and fresh in the morning.
6. Serve coffee/ tea
-Alwaysserve coffee with illy mug, bottom plate and tea spoon.
7. Serve special menu
-Any guest can ask for the special menu for breakfast that we do not offer on the line buffet.
-Example; Some kind of fruit, noodle soup, rice/oat porridge, pancake/waffle etc.
8. Present check (for the guest who has an extra charge)
-Here is your check, sir/madam.
-May I present your check, Mr…? Would you please sign here?
*Present the check in a clean bill folder with a Le Meridien pen and logo check folder.
9. Farewell to guest
- Good bye, sir/madam. Have a good day.
-Thank you, Mr…. see you again tomorrow.
-I’m sorry for the inconvenience caused and hope to see you in the future (If the guest has experienced dissatisfaction)
4.2.3 Dinner Service Procedures
1. Greeting the guest
When guest approaches the restaurant:

- Ask if they have a reservation and check the welcome charter if they do

3. Seating guest with reservation

- Pull chair; always assist ladies first
- Unfold napkin and place on guests’ lap
4. Water service
- Holding a bottle of still water ask the guest; “Would you like some still or sparking water”
- If still you serve at the pre set glass
- If he/she needs sparkling water you have to change the glass and serve them
5. Present the beverage and wine menus suggest drink special
- Here is our wine list, sir/madam. (Open menu for the guest and inform them of wines that are not available)

- Inform them about any wine promotion that is running at the restaurant
- Would you like to try an aperitif or a pre dinner cocktail?
