The content of reduced glutathione in the tested muscles after they

40.8% on average (Fig. 1).
In this study,we used a statistical analysis involving the construction
of classification and regression trees (called C&RT), consisting of scheduling
in order of importance factors affecting the content of reduced
glutathione. The analysis of C&RT created on the basis of the content
of reduced glutathione depending on ante- and post-mortem factors
is presented in Fig. 2. A key factor differentiating the content of GSH
in the tested muscles was heat treatment (grilling), followed by
muscle type, paternal breed, and castration of the animals. On the
basis of the classification tree analysis, the highest content of GSH
(18.55 mg/100 g of raw meat on average) was observed in the gluteus
medius musculus obtained from animals of the Hereford paternal
breed or steers.
