Purple sweet potatoes (PSP) are a natural source of anthocyanins.
It has been reported that the concentration of
anthocyanins in PSP is similar to that found in some
anthocyanin-producing crops, such as blueberries, blackberries,
cranberries and grapes (Bridgers et al. 2010). Since
PSP is a low-cost crop, it represents a promising source of
natural anthocyanins for industrial production.
