Water stress is known to hasten maturity in many indeterminate
crops (e.g., Orgaz et al., 1992 in cotton).We hypothesize that, in
southern Spain, a Mediterranean climate, manipulation of
irrigation scheduling strategy in pepper might induce a more
determinate behaviour leading to a concentrated ripening.
Deficit irrigation was proposed long ago as a technique that
could reduce irrigation water use while maintaining farmers’
net profits (English et al., 1990). The decline in water
availability for irrigation and the positive results obtained in
some fruit tree crops have renewed the interest in developing
information on deficit irrigation for a variety of crops (FAO
Report, 2002; Dorji et al., 2005; Fereres and Soriano, 2007).
Deficit irrigation should be applied at those phenological stages
that are least sensitive to water deficits; in the case of vegetable
crops such as pepper, water stress should be avoided during
flowering and fruit set, a difficult task given the long duration of
these processes in most pepper cultivars. Pulupol et al. (1996)
reported that the water saved from deficit irrigation did not
compensate for the yield reduction in tomato when deficit
irrigation was applied during flowering and fruit set.
The paprika-type pepper is quite different from pepper
produced for fresh market or canning, as the economic yield is
