Oxygen uptake rate (OUR), temperature, substrate watercontent, and residual dry matter profiles during the wheatbran SSFs are shown in Figs. 5 and 6. Ten-hour lag periodsoccurred at the start of all fermentations, during which oxygenuptake was low (Fig. 5) indicating low metabolic activity;substrate and exit gas temperatures (Fig. 5), and residualdry matter content (Fig. 6) were essentially constant;and substrate water contents (Fig. 6) were either constant ordecreased slightly due to water losses with aeration. In thestationary fermentation, the upper layer of substrate appeareddrier than substrate in contact with the underside ofthe bioreactor glass wall. The static substrate bed was occasionallyturned when substrate samples were removedfrom the bioreactor.
