Khao Yam (ข้าวยำ) or, to make its geographic origin more specific, Khao Yam Pak Tai (ข้าวยำปักษ์ใต้) is a close cousin of Nyonya herbal rice salad, Nasi Ulam, from our southerly neighbor, Malaysia (you’ll see much overlap between southern Thai cuisine and Malaysian cuisine). It mostly consists of cooked long grain rice, assorted fresh vegetables as well as herbs, and a unique dressing featuring fermented fish sauce called budu (น้ำบูดู).
