Antifungal
peptides
of
the
Iturin
family have been
isolated
from
the
culture
liquor
and
are
active
against
the
mycelial growth
of
the
spoilage
organism. FABMS,
MS/MS,
and
NMR
were
used
for
structure
determinations.
