Resistant starch IType 1 resistant starch (RS 1) includes starch present incells of plants with undamaged cell walls, occurring e.g. innot completely ground cereal grain. It is unavailable to amylolyticenzymes, since the gastrointestinal tract lacksenzymes capable of degrading cellulose, hemicelluloses,lignins, and other constituents of plant cell walls. Therefore,such starch together with fragments of plant tissue passesthe small intestine in the intact form.
