The content of GSH in various raw b

The content of GSH in various raw beef muscles is presented in
Table 1. The average content of this component accounted for
15.34 mg/100 g of raw meat and was statistically significantly dependent
(p ≤ 0.05) on the type ofmuscle. The lowest content of glutathione
in 100 g of raw meat was found in the psoas major (13.43 mg) and
semimembranosus (13.64 mg) muscles. The highest content of GSH in
100 g of raw meat was found in the pectineus (16.89 mg) and adductor
femoris (16.53 mg) muscles. The glutathione content calculated in the
drymatter of the muscles is also shown in Table 1. Similar relationships
were observed for both fresh and drymaterials. The glutathione content
in 100 g of muscle drymatter (dm) was 63.12 mg on average. The lowest
content of glutathione was found in semimembranosus musclus
(53.16 mg/100 g dm), while its highest level was observed in pectineus
musculus (72.33 mg/100 g dm).
