there are five stages that could be applied to
recover high-added value compounds from food plants:
(1) macroscopic pretreatment, (2) macromolecules and
micromolecules separation, (3) extraction, (4) isolation
and purification and (5) product’s formation. Applying
these stages leads to reach the ultimate goal of (1) maximizing
the yields of the target molecules, (2) suiting the
demands of industrial processing, (3) clarifying the highadded
value compounds from impurities and toxic molecules,
(4) avoiding the deterioration and loss of functionality
during processing and (5) ensuring the food grade
nature of the final product
