Edible insects provide high amounts of protein,
fatty acids, vitamins and minerals and are a
promising alternative to conventional protein
sources. As most people in Lao PDR consume
insects at least occasionally (Barennes 2010),
there is good reason to believe that promoting
insect consumption can help combat malnutrition,
alleviate food insecurity and generate new sources
of income in the country. Moreover, edible insects
are considered to be saep laai laai (delicious) by
most Lao consumers, and thus are considered a
preferred food item.
