The focus of this article is that there is a relationship between
implementing eco initiatives to recycle water and food waste and
a reduction in this waste generated by selected Cape Town hotels.
Awareness of the state of our environment stems from mass movements
during periods in history when industrial development
became more important than the public’s concern for their ownhealth and that of the ecology (Earth Day, 2011). The causes of these
movements, namely to bring environmental concerns to the attention
of the public, continues with current issues such as a clean
environment (Earth Day, 2011). According to Alexander (2002: 5),
up to 1499 litres of water may currently be used daily in a single
luxury hotel room and hotels may produce food waste of up to 46%
of a hotel’s total waste, which is clear evidence of the impact of the
hospitality industry in this regard.
