This can be explained by the structure of the molecule of sorbitol which has a greater number of hydroxyl groups that glycerol, increasing the interaction between the carboxyl groups of starch and gelatin. As a result, mobility between the chains of starch and gelatin decreases, and also decreases the interaction with water, which is the natural plasticizer for starch.
