Soil composition is the most important factor for the
control of mineral abundance in food and feed plant
materials. Postharvest options for controlling mineral
content and bioavailability are, in general, confined to
operations controlling water usage (e.g. washing, soaking). Ripening stages can have positive effect permitting access to otherwise bound minerals. Since vitamins
can play an enhancer role, their post-harvest stability
will influence final bioavailability.
