The major effort addressed by this study was to verify whether tapioca starch/dHG coatings containing GTEs showed antimicrobial activity against food-borne microorganisms and its application potential on minimally processed foods. Several lines of evidence support our hypothesis. First, significant antimicrobial activity and migration of tapioca starch/dHG coating solutions containing GTEs have been shown. Second, a formula of tapioca starch/dHG coating solution containing GTEs, which is suitable for spraying application on food surfaces, has been developed. Third, the developed tapioca starch/dHG spray coatings containing GTEs could successfully reduce the growth of aerobic microorganisms, yeasts/molds and three strains of Gram positive bacteria as being applied to fruit-based salads, romaine hearts and pork slices.
