As you might aware the situation of our end stock for spirit and wine, I raised the RED flag to everyone that we're in mid of clearing off the current stock and trying to optimize the numbers by utilizing them wisely in your respective outlet.
We now short listed due date of our outstanding payment that has to be done and will affect the cash flow of CKR/Garage specifically.
It need help and effort from everyone to achieve them together until end of July.

SPIRIT
-Stop buying unnecessary products for stock, minimize changing recipes/Bev list & review current recipes. We have to Improvise more and directing the guest what to buy
-Create sort of promotion or Specials utilizing existing items instead of buying new products.
-Lot of CK/Legal Stock has been sitting due custom check past year, it has to clear now as the stock has been there sometimes a go.
Had said that, we will stop buying BM product and start utilizing our existing stock. It will affect Bev.cost % as cost product almost double compare than BM product, however we could justify due to the situation.
-Reduce par stock level at immediate affect, adapt with sales at each outlet.
-Using high volume stock as temporary house pouring brand, it has to be done discreetly due to group contract with Diegeo. however we still serve the purpose of using our existing stock.

-We would purchase only the products that we cant replace or a specific request with special demand.

WINE
-Adapt our current wine list with existing stock @ the store, check and review within this week.
-House pouring list to adapt with existing stock with the same range of price and quality
-Replacing current menu if most items are no longer available, with those stock that still hanging @ the store.
-We still waiting PHBC confirmation on our wine clearance, hope they could help us to clear them

As an addition, I will review Bev. purchase order to ensure the plan are follow and respect by everyone.
Please note all the action taken should not affect the guest experience and jeopardize the quality we want to deliver. Have to work in extra to brief the all the staff and get them involve to achieve our target.
