Growing development of the fruit processing industry,
especially citrus, together with the higher revalorization
of goat dairy products, would seem to be a justification
for bringing both together to produce new products. Goat
yogurt has a suitable matrix for including ingredients such as candied fruits, jams, honey, nuts, etc., which are highly accepted by consumers. In this sense, research has been carried out to develop a goat yogurt in which plant by-products are included. Zare et al. (2011) argued that products like yogurt provide good opportunities for the
development of fibre-enriched foods where acceptability by consumers is mainly based on satisfactory textural and sensory quality parameters.
